Tips For Sautéing Potatoes Inside Their Vein
I am a big advocate of sautéing potatoes until their edges begin to brown or turn yellow instead of just turning white and mushy. While there are several reasons why cooking potatoes becomes tough, and not ready for a snack, let’s dive deeper into this topic anyway. According to Wikipedia, starchy vegetables, including potatoes (particularly French fries), brown quickly if you don’t cover them properly when panfrying (the exact same situation happens with eggs when cooked until hard). Another reason why potatoes brown quickly is if you overcook them with short temps, meaning, the temperature stays constant rather than rising slowly over the course of cooking. Simply cutting off the outer layer of skin also prevents cooked potatoes from going bad, since enzymes in starch break down the flesh, not allowing toxic compounds and chemicals to remain. Cut off all remaining skin first, then set aside the skin on top to crisp up faster. Next, the easiest way to remove the skin on potatoes is to grill. The secret is in the sauce that goes on top of your potatoes. Let that drip on the ground for a minute, then peel. Wash off the sauce with warm water and pat dry. Once a deep-fryer is heated to medium heat, the grease is removed by gently flipping the potatoes to flip, not touching them. That’s it! Make sure to rinse and dehydrate your tomatoes before frying because any residual liquid will prevent the tomatoes from absorbing the oil and preventing any desired results.
